I REALLY Wanted to Say “Cranberries”!

Just one of many successful pranks orchestrated by our Event & Audience Relations Manager, Phillip Fritts… While we’re always wary of his intentions, he still seems to be successful in pulling us in to his tomfoolery.

For this one, we were each supposed to state one word that represents Thanksgiving. All of the obvious ones had been taken…“gratitude”, “family”, etc. So I immediately knew what my word had to be. Cranberries. I LOVE them! And my Thanksgiving Day table is not complete without a dish containing those lovely, tart berries. Of course, as soon as I sat down in front of the camcorder and opened my mouth, he blew that air horn. We should have known better than to ever trust him!!

I may not have been able to talk about them in the video, but this blog is my restitution. And, what’s the point in talking about them, if I can’t share a good recipe?? Our staff recently had an early Thanksgiving dinner, with each of us providing a side item. The cranberry salad that’s been a longtime favorite of my family quickly became a favorite of my co-workers, as well. It’s so simple to make and incredibly delicious! Here you go:

Cranberry Salad:

1 can of whole berry cranberry sauce

1 box of cranberry or raspberry Jell-O

1 cup of orange juice, heated just to the boiling point

8 oz. can crushed pineapple, drained well (save the juice for the topping)

In a glass mixing bowl, completely dissolve the Jell-O in the hot orange juice. Add the cranberry sauce and stir until smooth, then fold in the pineapple.

Pour into a casserole dish that’s been sprayed with Pam. (I always double the recipe and put it in a 9 x 13 Pyrex)

Refrigerate until set, then add the topping:

8 oz. cream cheese, softened

Reserved pineapple juice (you should have about 3 tbsp.)

1 tablespoon lemon juice

½ of an 8 oz. carton of Cool Whip

Beat cream cheese until smooth, then add remaining ingredients. OPTIONAL- Sprinkle top with chopped pecans.

Amid all the prepping, cooking, and baking, I pray you and your family are able to focus on our Heavenly Father and His blessings. Thanksgiving is my favorite holiday. I love everything it represents. And, I love serving a huge dinner to my family and friends. Yet, I have to be very careful not to get caught up in the “chores” aspect and, instead, purposefully keep my heart and mind in a state of reflective gratitude. We are a blessed people, who serve a loving God.

“Enter into His gates with thanksgiving, and into His courts with praise: be thankful unto Him, and bless His name. For the Lord is good; His mercy is everlasting; and His truth endureth to all generations.”
